Rock Cakes
Ingredients
- 250 g Flour
- 125 g Currants
- 125 g Mixed peal
- 1 tbsp Milk
- 30 g Candied peel
- 1 teaspoon Baking Powder
- 60 g Butter
- 1 Egg
Instructions
- Heat oven to 190 degrees
- Sift the flour into a basin
- Rub in the butter lightly
- Add the peel, sugar, and baking powder to the other ingredients
- Beat up egg and milk in a separate basin
- Add this to the other ingredients and make into a very stiff dough
- Take up a little bits of the dough and form into lumps and put them on the baking tray
- Bake for about 15 minutes
