Raspberry Drops
Jam drop biscuits from the Coronation Cookbook
Ingredients
- 3 cups flour
- 6 tbsp butter
- 2 eggs
- 1 cup sugar And a little more sugar to roll the biscuits in
- 2 tsp baking powder
- raspberry or other jam
Instructions
- Beat butter and sugar to a cream
- Add eggs and beat in well
- Then add flour and baking powder and mix well. It should now be a soft dough
- Line the baking tray with baking paper
- Roll dough into small balls. Put them on the baking paper and press lightly on the top to make a depression
- Add jam by the teaspoon into the depression in the biscuits
- Bake for 10 - 15 minutes
